INGREDIENTS:

1 8-ounce can tomato sauce

1/4 C brown sugar

1/4 C vinegar

1 tsp prepared mustard

1 egg, lightly beaten

1 small onion, minced  (I use only a bit of dried onion)

1/4 C cracker crumbs

2 pounds lean ground beef

1 1/2 tsp salt

1/4 tsp pepper.

DIRECTIONS:

Combine tomato sauce, brown sugar, vinegar and mustard in a small bowl. Set aside.

Combine egg, onion, cracker crumbs, ground beef, salt and pepper in a mixing bowl. Add 1/2 C of the tomato mixture and blend thoroughly. Shape into round microwave pan. Make a depression in top of loaf. Pour remaining tomato sauce over top of meat. Cook, uncovered in microwave on 70 percent power for 25 to 30 minutes, or until center is cooked. Cover meat and let stand about 10 minutes before serving.
