INGREDIENTS:

1 C oil

1 1/2 C sugar

3 eggs

2 C flour

1 tsp each of salt, baking soda cinnamon and vanilla

4 large apples, sliced

DIRECTIONS:

Beat eggs, then add sugar and oil. Sift dry ingredients together and add egg mixture. Mix well, add vanilla, then fold into apples. Bake in an ungreased tube pan or a greased 9-by-13 baking dish. Before baking, sprinkle top with 2 tsp sugar, 1/4 tsp cinnamon and nuts. Bake at 375 degrees for 40 to 45 minutes.
