INGREDIENTS:

1 1/2 pounds lean ground beef

20 to 24 ounces of salsa, divided

1 block (8 ounces) mild of sharp cheddar cheese, or other cheese of your choice

DIRECTIONS:

Preheat oven to 350 degrees. Lightly spray a loaf pan with nonstick cooking spray and set aside. In a large bowl, using your hands, mix ground beef and half of the salsa until thoroughly blended. Turn mixture out onto a large piece of parchment paper, and press out mixture until it forms a circle. Place the block of cheese into the center of the meat circle and wrap the edges of the mixture around the cheese, forming a loaf and sealing the edges. Place meat loaf into the prepared pan and top with remaining salsa. Bake for 45 minutes to one hour.
