Ingredients:

1 1/2 C. flour

3/4 C. sugar

1/2 tsp. salt

2 tsp. baking powder

1/3 C oil

1 egg, beaten

1/3 C. milk

1 C. fruit (maker’s choice)

Directions:

Preheat oven to 400 degrees. Mix all dry ingredients in bowl. In a 2-cup measuring cup, beat egg, oil and enough milk to make 1 cup (add ingredients in order). Mix with dry ingredients until just combined, then add fruit. Line a cupcake pan with liners, fill with muffin mixture

Crumb Topping

Ingredients:

1/2 C. sugar

1/2 C. flour

1/4 C. butter softened

Directions:

Mix together with a fork and sprinkle on top of muffins. Bake for 20 to 25 minutes.
