Ingredients:

1/3 C. vinegar

1/2 C. extra virgin olive oil

1 onion

4 C. broccoli in small pieces

1 tsp. Creole or mild coarse grain mustard

8 ounces kale, massaged

1 tsp. salt

6 ounces tart dried cherries or Craisins

A few cracks of fresh pepper

1/3 C. salted, shelled sunflower seeds

2/3 C. real maple syrup

Directions:

In the jar of your blender, combine the vinegar, onion, mustard, salt, pepper and maple syrup. Blend until smooth. Then with the blender running, slowly drizzle in the olive oil and set aside. In a very large bowl, combine the broccoli, kale, cherries and sunflower seeds. Drizzle about three quarters of the dressing onto the salad and toss to coat evenly. Add more dressing if desired. Refrigerate for up to 24 hours.
